Feta Omelet




A simple but delicious breakfast.  One day many years ago my husband and I were driving along the Florida coastline and we stopped for some breakfast at a small eatery.  This is what they served us and it was scrumptious.  

Feta Omelet

2 eggs
dash of milk
1 teaspoon grapeseed oil
1 clove of garlic
1-2 tablespoons of feta
fresh sliced tomatoes

Warm your pan with grapeseed oil for a few minutes on medium heat.  Crack your eggs in a bowl, and add dash of milk.  I use a garlic press to crush my garlic, and squeeze into bowl with eggs, mix with a fork.    Pour eggs in warm pan.  As eggs are cooking crumble feta over them, and on one side of the pan lay tomato slices.  Fold eggs over and cook a few more minutes.  Serve with tomatoes slices and salt and pepper.  Delish!
